Grilled Salad



I have been on a salad kick here for a while now. The other day I had some eggplant and zucchini and corn that needed to be used and viola this salad was born. I have to say, it was luscious. The eggplant didn’t add much for me, which was surprising since that is really the veggie that kick started the whole concept for me…but it didn’t hurt wither.


2 ears of corn
2-3 zucchini sliced
1 eggplant thinly sliced
1 lb flat iron steak
Then whatever else you like in your salad we had tomato, onion, cucumber, lettuce



Season everything, I used a grinder mix of garlic, sea salt and red pepper. Grill. Slice your meat thinly, and cut the corn off the ears and assemble your salad. I used a Greek yogurt dressing that could not have gone better with it all (below). We had some grilled flat bread to sop it all up, got to love summer!


Dressing

½ c. Greek yogurt (I use Fage)
Juice of one lemon
1 clove of garlic grated
1 tsp fresh oregano chopped super fine
Salt and Pepper

Mix all and chill

We made grilled chicken fettucini alfredo last night (with fresh smoked bacon crumbled in too) which was AWESOME.

But if was just Alexis and I eating, I told her I would have prefered doing a salad with the grilled chicken. I guess we are on the same train o' thought;)

the yogurt dressing sounds killer with this. almost everything tastes better with greek yogurt

oh! I love your dressing recipe! It's sort of like a more liquidy laughing cow cheese! the salad looks absolutely scrumptious...certainly not just a plain dieter's meal!

The hubs and I were just talking tonight about how we needed to find a great grilled salad recipe. I just scored!

I am not a huge eggplant fan, but I might give it a whirl. or, maybe some mushrooms?

This looks SO good and the thought of the steak has me drooling!!

I kept asking and asking for eggplant here, and no one knew what I was talking about.
Then I checked out the local fruit and veg market... and they call it aubergine in Oz! Not everyone carries it either, which was why I never "spied" it at the grocery store!
